Gluten-Free Meatloaf

Ingredients:

2/3 cup gluten-free steel cut oats
2 pounds lean ground turkey
1 cup beef broth
2 large egg
1/2 cup chopped onion
1/2 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon ground sage
¼ teaspoon thyme
½ teaspoon black pepper
1/4 teaspoon garlic powder
1 Tablespoon coconut aminos
1 Tablespoon anchovy paste
1/2 packet Truvia

Directions:

1. Preheat oven to 350 degrees F.
2. Mix all the ingredients together, spread the meatloaf mixture into an ungreased loaf pan.
3. Bake, uncovered, for 1 hour until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) 
    Serve hot or cold in a sandwich.
